Dubbed the 'Vilmart of Spain', the Torello family have been dedicated to the production of Cava since 1950. Situated in the Penedes region, their vineyards of Macabeo, Xarello and Parellada, surround the impressive family property of Masia Can Rossell.
Unlike many properties, they vinify the individual grape varieties at their place of origin. Thus the Macabeo is vinified in the coastal; zone of the Alt Penedes, in order to capture its fine aromas and delicate, fruity character, which brings a certain elegance to their base wine. From the central area between Vilfranca del Penedes and Sant Sadurni d'Anoia the Xarello is vinified. This adds the structure and balance to the base wine. Finally, at a height of 800 metres above sea level, on the Font Rubi, the Parellada is harvested and adds a freshness to the flavour and an exquisite perfume. Their striving for perfection is epitomised in the Gran Reserva 'Kripta'. Each of these bottles is a special creation, from the selection of the yeasts, vinification of the grape musts and ageing in their immaculate old cellars of sedimentary calcareous rock at Masia Can Rossell. Each bottle is hand blown into the shape of an ancient amphora with its unique label the creation of the painter and sculptor Rafel Bartolozzi.
The Cava Aliguer is bottle fermented 'a la Methode Champenoise' and aged for 24 months prior to release. It is elegant and balanced with a clean, slightly toasty character, which makes it an ideal aperitif or as a perfect compliment to fish, seafood, light meats and soft cheeses. The Kripta is again bottle fermented and aged for a minimum of 48 months before release. It has a deeper aroma and a greater concentration of slightly creamy, nutty aged fruit and pan grille. The structure of this wine will allow it to compliment red meat, spicy fish and strong cheeses.
