Thierry Matrot, as we have reiterated so many times before believes that it is essential to maintain low yields by severe pruning, not simply green harvesting. He tries to ensure that his vineyards have a living soil, by working the land and avoiding all chemicals. Such is his desire to ensure that the terroir is not masked he has always detested any influence of new oak. Although he purchases new casks every year, he lends them to a friend for a year or two until they have mellowed. The white wines are fermented for two to three weeks, in temperature controlled vats at 54 - 71 degrees f. The malo-lactic fermentation takes place in April or May and the wines then mature in small oak casks ranging from 2-6 years of age for two to three months. Matrot does not use battonage as the carbonic gas present in the wine keeps the lees moving to his satisfaction. The wines are bottled at the end of the summer, prior to the next harvest. Such is the backward, complexity of these wines that they normally require some 2 - 3 years ageing before they commence to drink. Thierry also produces truly seductive red wines - the Blagny Pieces Sous les Bois is one of my personal favourites. Dependent upon the vintage, 60-100% of the grapes are de-stemmed. The wines are vatted for 6 - 10 days in enamel, lined tanks and fermented in small casks of French oak. As for the white wines this is never new. The style produced is very sensuous, with a perfect balance of concentrated fruit, mineral from the terroir and great finesse.
