The domaine comprises 12 hectares divided between several parcels within the single appellation. Of Savigny Les Beaune. The vineyards are all managed by lutte raisonnee and no chemical herbicides are employed. The youngest vines are trained in the Royat method, which helps control the vigour of the young vine. The others are trained to the Guyot. All the vineyards are planted with the Pinot Noir Fin. Jean-Michel produces two village Savignys, one from several parcels and the lieu-dit, Aux Grands Liards. The 2000 Aux Grands Liards is beautifully mature, showing harmonious secondary flavours and silky tannins. This is perfect to drink now. The other red wines listed are all from Jean-Michel?s Premier Cru vineyards and the 2004 vintage. The Narbantons is incredibly seductive with luscious, ripe fruits and silky tannins. The Gravains possesses a fabulous intensity and distinctive hint of mineral behind the rich fruit. The Serpentieres is a much more masculine and more complex example, which will require more patience. Whilst, although both wines will undoubtedly benefit from 3-5 years in the cellar, you could happily pull the cork on the Narbantons or Gravains tomorrow, the Serpentieres really should be left to slumber for the next five but will still be singing after ten to fifteen. Jean-Michel?s Savigny Les Beaune Blanc has the same perfect balance and finesse as his reds with a lovely minerality.

Dry, medium acidity, low tannins, lots of ripe, rustic fruit, juicy strawberry, redcurrant/ berry. Earthy with a hint of herbs and a touch of wood spice. (CG)

2004 Savigny Les Beaune 1er Cru 'Serpentieres' Nose quite closed at time of tasting. Deep, intense, powerful black fruits on the palate with hints of toast and spices. Much bigger, more masculine structure with more serious tannins. Brilliant length and balance of acidity. This is a keeper, which will re-pay a good 8-10 years in the cellar. (VR)

2005 Savingy Les Beaune 1er Cru 'Serpentieres' Wonderful nose again, sensuous, concentrated, earthy, mineral and pure. On the palate the fruit is actually sweeter and more forward than the Aux Gravains at present – very attractive black fruits again – cherry and berry with lovely purity and distinctive smoky character. Superb lift of acidity. Very harmonious already but with potential to develop extra complexity. Long, clean finish. (VR)
